Empty Plates serves a 7 to 9 course tasting menu of modern Bangkok cuisine. The restaurant offers a private dining experience with beautiful views over the Bangkok skyline, and is suitable for enclosed groups or public tasting events. The menu has a distinct focus on Thai ingredients, utilised in creative ways and brimming with flavour. Constantly changing, the food is inspired by the chef’s childhood memories, with clear influences of the fresh markets in Bangkok and the collaboration with organic farming communities in Chiang Mai.

Empty Plates creates a home-like atmosphere where enjoying and sharing food is the main focus. Chef Steven has converted the main room of a Bangkok high-rise building into a cosy dining room, with low chairs and small round wooden tables. The room conveys a feeling of being out in nature, whilst living in an urban jungle. Walls are painted green walls and the space is elegantly decorated with bamboos and plants. More than a restaurant, Empty Plates is a private chef’s table, or more so - a private chef’s dining room.

As all the ingredients are mainly sourced locally, a strong Thai influence is distinct within the cuisine, however the menu cannot be easily labelled. Technique and presentation comes from an abundance of different influences, including Japanese, Korean, Vietnamese, Indian, French and Swiss. The focus is on everyday ingredients that guests can relate to, but the chef shows his guests how these foods can be used and eaten differently. He also aims to use less-known or underutilised local ingredients that he receives from farmers or finds at the fresh markets. The menu is created daily, based on the information collected from guests according to their dietary restrictions or food allergies.

“I have been culinary-shaped by the influences of growing up in Europe and surrounded by great cooks in my family. Moving to my mother’s home country in 2009, I became fascinated with local ingredients, the differences in Asian cuisines and fundamental cooking. I decided to open Empty Plates in April 2018 to share the food I like, the way I like to serve it, which is quite unique. Creative, innovative and ambitious, with no fear of crossing boundaries, because there are none in cooking - and always prioritising taste over anything else. Combined with a focus on locally sourced ingredients, that is the way I would describe my approach to cooking.”

“Empty Plates is not a restaurant, it is a private home dining experience with a maximum capacity of just 12 guests. There is no menu, you simply inform the Chef of your dietary requirements and he will create a different menu and bespoke dining experience each time. Only available by advanced reservation for dinner.”
