The main dining area features expansive architecture with huge windows with views of the rice paddies, and an on-full-display open kitchen in the centre of the room. Guests are also taken through other spaces at NXT throughout their tasting menu experience.

The style of Locavore NXT’s cuisine is hard to define as it is so unique: it is a creative cuisine that celebrates the farmers, fishermen and food artisans of Indonesia while using modern European cooking techniques.

At NXT, sustainability is at the heart of everything we do. From harnessing renewable energy to closing the waste loop, we are committed to reducing our environmental impact while creating a regenerative ecosystem within our restaurant.
- Harnessing Solar Energy
Our rooftop solar panels, installed in partnership with Sunterra, transform unused space into a source of clean, renewable energy. The electricity we generate is fed back into the national grid, covering 15% of our total energy use (as per government regulations in 2023). We hope to expand this in the future to move towards complete energy independence.
- Water Recycling & Conservation
Water is precious, and at NXT, we ensure none goes to waste. Our greywater treatment system filters all wastewater over 10–14 days before repurposing it for our rooftop food forest irrigation. This process helps us reduce water consumption while keeping the ecosystem in balance.
- Zero-Waste Philosophy
Our Circular Waste Centre ensures that nothing leaves NXT without a purpose. We meticulously sort and process all waste:

✔️ Shredding plastic for recycling
✔️ Transforming glass into building materials
By closing the waste loop, we minimize our environmental footprint while creating sustainable materials for future use.
- Regenerating Soil Naturally
Instead of letting food scraps go to waste, we turn them into nutrient-rich compost through our worm farms. This organic fertiliser nourishes the rooftop garden, ensuring that the soil giving us food is also being fed in return.
- Nature-Powered Waste Management
Even our toilets are part of the sustainability cycle! Our Worm Sewage Treatment Plant—home to over 2,000 hardworking worms—naturally processes waste and greywater from our kitchen sinks. This eco-friendly system helps us filter wastewater for irrigation while reducing environmental impact in an innovative way.
