Chef Mond explains that he chose to renovate the buildings that now house one of the best Thai restaurants in Phuket because of his attachment to the area. He added that he used to walk past the shop fronts on Dibuk Road on his way to school. “Phuket born and raised, I have enjoyed Southern Thai cuisine since I was young, as my family business was the Kaab Gluay restaurant in Patong, which my family ran for more than 25 years. After graduating culinary school in the School of The Oriental Hotel Apprenticeship Program (OHAP), I was given a chance to be the executive chef in Foto Hotel at just 24 years of age, and a few short years later I won an episode of the popular Iron Chef Thailand 2020 competition. ”

Cozy Traditionalism Meets Modern Minimalism at Royd Restaurant Phuket

Behind the deep red facade of Royd Restaurant Phuket is a cozy, if minimalist, interior where the decor carefully preserves the spirit of the old building (a traditional Thai townhouse) while introducing some updated ideas. The lighting is subdued and picks out details such as the bar counter, enhancing the already welcoming atmosphere. Royd Joins the Ranks of MICHELIN Restaurants in Phuket

Being selected to be on the pages of the Red Book’s Thailand 2024 edition is proof that Royd has secured its place among the best fine dining restaurants in Phuket. Royd is also about exploring the history and traditions of Southern Thailand to create a menu with a modern twist that changes with the seasons. However, many of the dishes served up at Chef Mond’s restaurant in Old Town Phuket have a connection to the meals he grew up with while being presented in a way that neither he nor his guests may be familiar with. For example, this season’s The Taste of Junk Ceylon menus have been inspired by the provinces of Trang, Ranong, Krabi, Phang Nga, and Phuket, a region that was once called Junk Ceylon by Western sailors and is renowned for its unique fusion of Malay and Chinese cultures and cuisine. The 9 Courses 9 Bites Tasting Menu at Royd is inspired and created from a deep knowledge of regional flavors as well as by listening to and learning from cooks and restaurant owners from across the south of Thailand. Specialties include Andaman squid with Phuket pineapple and Southern-Thai sour curry, Krabi fish curry with Hua Hin caviar, homemade rice noodles and frog legs, and lamb with burnt banana jam, white turmeric, organic rice, and pulled lamb wafer. Desserts at Royd include salak and chrysanthemum tea, and Trang nipa palm with Phuket chocolate, and Phatthalung black sticky rice.
