At the helm is Chef Orng Joitamoi who says what makes his kitchen create some of the best food in Yangon is a close working relationship with the people who supply those ingredients and delicious produce right down the chain from farmers and artisan growers to purveyors and foragers, all who have generations worth of knowledge and experience when it comes to scouring the country for the very tastiest ingredients available. Chef Orng and his dedicated team in the kitchen use their background and accumulated experience to create some of the best food in Yangon from some of the highest quality farm-to-table ingredients.

The ECHO Restaurant maintains its position among the top restaurants in Yangon by relying on Chef Orng’s creative sparks of genius and his ability to create a menu that reflects the seasons in the produce and ingredients employed, and incorporate them into the Yangon fine dining experience. “I just love food! I was always surrounded by it - my mom and uncle are well known for their cooking in the village where I grew up. So, I always ate well and I always got to watch them cook and help them prep. Every child helped prep meals, it was just the way in the village. I started really cooking when I was about 13 years old. Every year, to celebrate the end of the school, classmates would all gather at someone’s house and I would always volunteer to cook up the feast. And I knew I cooked well because the elders started talking, comparing me to my mom and uncle. But I love to cook because it feels like I’m entertaining myself when I cook. And of course, the joy I get when I hear someone has enjoyed the food I made. I think that’s what drives the passion for my mom and uncle as well - they were always consulted and coordinated the community "A Hlu" (charity meals) at the village monasteries. So that’s where my love for feeding people comes from.”

When I first entered the kitchen and became a chef in the UK, I was so excited to cook with fine ingredients like foie gras and caviar and wagyu. Now, after returning to Myanmar and becoming a head chef, those things aren’t what inspire me anymore. I’m now driven by the desire to showcase underrated and undervalued local ingredients at the fine dining level. I want to show people that what they deem "ordinary" can actually wow them. It brings me great pride and pleasure. I am always chasing the feeling of excitement I used to feel on the special day we got to eat chicken curry when I was growing up in the village where meat wasn’t on the table every day. On another note, cuisine takes me places, opens my eyes and helps me learn about other people and cultures. With cuisine becoming borderless, and ingredients from all over the world becoming accessible, I’m realizing that every community, every culture has their own ways of achieving the same tastes we all can experience... sweet, salty, sour, bitter and umami... and importantly for us in Southeast Asia, spicy! We’re just eating different things to achieve it.

My vision for ECHO Dining is to put Myanmar on the international culinary map. I want to excite people through our food and it hurts me when I see locals flying to Bangkok or Singapore to eat fine dining. I will admit it is an issue of pride; as a Burmese person, I want to show that a Myanmar chef can cook to the level of other world-renowned chefs. And I want to do that while highlighting Myanmar’s beautiful produce, firstly to the region and some day to the world.

Chef Orng draws inspiration from cross-border cuisine and the ECHO Restaurant prides itself on creating dishes from the highest quality seasonal ingredients. Standout favorite dishes include Myanmar Htamin Hinn (a signature dish and regional specialty of Inle Lake in Shan State made with fermented rice), Kyay Oh (a popular noodle soup usually made with pork and egg), and Mohingya (a delicious fish soup with rice noodles). Although a deft hand at creating his take on traditional dishes, Chef Orng is open to learning about different dishes and creations from around the globe too and prides himself on seeking out different ways to do this from expanding his local knowledge, eating at other top restaurants in Yangon, and watching what other creative chefs and foodies are sharing on their channels in the internet. He is highly trained in French and European cuisine so there are always some international favorites to be found on the ECHO menu.

Chef Orng Joitamoi Brings a Lifetime of Experience to the ECHO Menu

Chef Orng has a vision of putting fine dining in Yangon on the international map through his ECHO menu. While growing up, Chef Orng says he and the other children in the village were expected to help prepare meals and that he learnt how to prepare food by watching his mother and his uncle. Creating the best food in Yangon reminds him of a time when meat wasn’t available every day so there was real excitement on the days when chicken curry made it onto the menu. Chef Orngs’s path to running a fine dining restaurant in Yangon took him to the UK where he was given the chance to cook with the finest ingredients including wagyu beef, caviar, and fois gras. However, he does not believe that the best restaurant in Yangon should rely on such high-class Western staples and that these ingredients no longer offer the inspiration they once did.

At ECHO Restaurant he wishes to champion undervalued and underrated ingredients found locally and elevate them to the level of fine dining in Yangon. He added that cooking had taken him to many different places and made him aware that in a world where cuisine is essentially borderless and ingredients can be flown in from anywhere in the world, there are ways of creating tastes that everyone can appreciate while experiencing the best food in Yangon. Chef Orng added that he aimed to prove through the ECHO Restaurant that a cook from Myanmar can create cuisine that is at least as good as the dishes created by other internationally admired chefs. He said he aimed to do this firstly by proving it regionally through his fine dining restaurant in Yangon and then to the rest of the world. ECHO Dining is located in the M Building on Yangon’s main road. Although parking is available a taxi will drop you off at the entrance to the main lobby where an ECHO Dining hostess will be waiting to take you to the 24th floor.
