Set away from the Bangalore eating places of the city, Farmlore Restaurant is neatly nestled in farmland and lush forest where what is in season deliciously and oh so freshly dictates the ever-changing 10-course degustation menu. The restaurant’s wood-fired oven (the only oven they use) is fueled by pruned mango wood and named “Kannagi”, a wronged Tamil woman who, legend has it, cursed the city of Madurai to be engulfed in flames over a misunderstanding over a stolen anklet. The aptly named stove is used for everything from baking bread to smoking to ripening.

Elsewhere on the Farmlore Bengaluru farm, ethical practices that have been handed down from generation to generation are employed to preserve the organic nutrient health of the soil. As well as employing science to improve how they grow vegetables on the farm, Ebeneezer explains that it is also important to embrace the traditional, like planting radishes around vegetable patches as a way of releasing nitrogen into the soil as well as making the soil easier to till. Their methods enable individuals to cultivate a diverse range of vegetables in their gardens using the "black gold" fertilizer, combined with coco peat and soil. This systematic approach maximizes gardening efforts and yields a variety of delicious, healthy and organic produce.
