The Chef & His Brigade

Chef TonChef Ton
“I grew up eating delicious meals prepared by my mother and grandmother. After graduating from The Culinary Institute of America and getting an MBA in Hospitality at Johnson & Wales University, I worked in several Michelin-star restaurants in NYC. At Le Du Wine Bar & Restaurant I’ve adapted what I’ve learned using local flavours and ingredients.”

Biography – Chef Thitid Tassanakajohn (Ton) at Le Du

The story behind Chef Ton’s multi-award winning cuisine begins with his childhood fascination with the herbs and flavours in his grandmother’s home-cooked meals, spawning his passion for cooking and creativity.
After initially obtaining a Bachelor of Economics from Chulalongkorn University in Bangkok, Ton relocated to the USA to follow his dream of becoming a Chef.
Ton graduated The Culinary Institute of America with the highest marks in his class, and remained in the U.S. to cut his teeth in some of New York City’s most famous Michelin Star restaurants including Eleven Madison Park (Three Michelin stars), The Modern (One Michelin star) and Jean Georges (three Michelin stars).
Chef Ton soon realised that food and wine were an important marriage of tastes and experiences, and also went on to become a Certified Sommelier (CS) from the prestigious academy, The Court of Master Sommelier in New York City.
Inspired by his experiences in New York City, Ton returned to Thailand in 2013 where he revolutionised the Bangkok scene with his food, presentation and style.
Chef Ton now runs Le Du, one of Bangkok’s most exciting kitchens, to create modern Thai-inspired cuisine using only the ingredients that are of 100 percent Thai origin.
Le Du is consistently ranked amongst the best restaurants in Asia and the world in international publications such as BK Magazine, Top Table, CNN, Tatler Thailand, The Financial Times, Asia’s Best 100 Restaurants, Jancis Robinson and many more.

Welcome to Bangkok

Founded in 1782 by King Rama I, the “City of Angels” is an energetic metropolis that pulsates with life—a perfect entry point for exploring all that Thailand has to offer. Often referred to as Krung Thep by Thais, the capital city is home to one of Asia’s richest historical, cultural and architectural heritages. Delicious aromatic street food permeates the air, varied outdoor markets, cooking classes, indulgent massages and nonstop nightlife all contribute to its magnetic charm.

Southeast Asia’s largest museum the National Museum, the expansive golden royal complex Grand Palace (home of the radiant Emerald Buddha), and the sprawling reclining Buddha can all be found in the Rattanakosin District. A boat ride up and down the Chao Phraya River and klongs (canals), lined with temples and historic edifices, is essential. The downtown old western quarter, filled with neoclassical buildings and antiques shops, and Chinatown offer additional sides to this flavourful city. Weekend travellers will delight in the Chatuchak Weekend Market containing more than 15,000 stalls selling goods from every part of Thailand, or the unique floating market known as Taling Chan. Bangkok’s charms are addictively splendorous.
