Indian food is known for its age old recipes, but at in-Q , the chef deconstructs and rebuilds his food. Guests experience a culinary journey through the sub-continent, from the streets of Delhi to the fresh air of the Himalayas to the backwaters of Kerala, with one traditional dish served as the last main course.

“I grew up in Delhi and my childhood included lots of visits to the walled city of Delhi, which is known for its street food with centuries of influence from several rulers of Delhi. I went to cooking school in the historic city of Gwalior, which exposed me to different ingredients and flavours. After graduation, I worked at The Oberoi in New Delhi in their Indian Kitchen. Then, I worked at the two-Michelin star progressive Indian restaurant Gaggan in Bangkok. At in-Q we focus on local produce, traditional flavours and modern techniques.”
