Masque is a wilderness-to-table restaurant set in Mumbai’s mill lands. Fresh, local ingredients are used to create a seasonal menu, delivered with acute attention to detail and international flair. Every ingredient is sourced from within the country, with the menu reflecting the changing seasons, ensuring that only the highest quality products reach your plate. The menu revolves around food that are in their prime, some of which are grown on Masque’s very own farm; the food is driven and inspired by what the farmers and purveyors offer on a daily basis. Masque offers tasting menus only, of varying number courses, as well as carefully curated wine and cocktail menus. In line with the source-local philosophy, all the syrups and infusions used at the bar are made in-house.
While ingredients are perennially at the core of Masque’s cooking philosophy, Chef Prateek’s influences within the cuisine are the heart of his inspiration: the generations-old gastronomical culture of Kashmir and the Himalayan belt. The result is an exemplary niche, where traditional techniques meet contemporary innovation.

The Chef and the Brigade

“I grew up in Kashmir around my family’s farms and my mother and aunt’s cooking; it was inevitable that as a teen, I ended my plans to be a commercial pilot and opted for hotel management instead. I graduated from the CIA and staged at restaurants across North America and Europe: Alinea, The French Laundry, Bourbon Steak and Le Bernardin. It was at Noma however, under Rene Redzepi, where I truly understood the philosophy of sourcing within the region, foraging, and harnessing the soil. I moved back to India in the hopes of exploring these concepts and philosophies, and a few years later, Masque was born. We source our produce only from within India, much of it coming from the country’s northern belt, while some of the produce grows on our own organic farm nearby. The unexplored abundance of India never ceases to amaze; every trip foraging in Kashmir yields new surprises, as do our local farmers, from whom we procure the most stunning produce.”



  • Atmosphere
Masque’s interior features a modern design that combines raw and finished touches, with large volumes of natural light. Colours and textures are deliberately muted, with the lighting created in the form of bulbs fitted into hand-blown large test tubes, and marble finishes fashion in a manner that minimises shine and glare. Masque comfortably seats 48 diners, with a bar and stools in addition.


  • Cuisine
Chef Prateek’s influences lie in his passion for the foods of Ladakh, Jammu, Kashmir and Uttarakhand. His team regularly cherry picks hero ingredients from each of the regions, and places them at the very centre of the 10 and 14 course menus. Other fresh, local produce are sourced entirely from Masque’s own organic and bio-intensive farm in Pune, while foods such as goat milk comes from Bangalore, olive oil from Rajasthan, Fiddlehead Fern from Himachal Pradesh and fish from the Andaman…
